Vitamin B9 is essential not only for protein and DNA synthesis, but also during pregnancy to prevent malformations in the fetus. <\/p>\n<h2>Properties and varieties<\/h2>\n<p>Lettuces, composed of more than <g id=\"gid_0\">90 percent<\/g> <g id=\"gid_1\">water<\/g>, are a valuable source of <strong>fiber<\/strong>, <strong> vitamin K<\/strong>, <strong>iron<\/strong>, and <strong>beta-carotene<\/strong>, a precursor to vitamin A. Often referred to generically as &#8220;salad,&#8221; there are actually many different varieties:      <\/p>\n<ul>\n<li><strong>Plain (or baby) lettuce:<\/strong> the most common, with a mild flavor.<\/li>\n<li><strong>Romaine lettuce (or spadona):<\/strong> elongated leaves with strong ribs and prominent veins.<\/li>\n<li><strong>Gentle lettuce:<\/strong> with wavy, green or reddish leaves.<\/li>\n<li><strong>Iceberg:<\/strong> very compact, crisp, sweet-tasting and light in color.<\/li>\n<li>Butterhead <strong>lettuce:<\/strong> similar to iceberg but with lighter, crisper leaves.<\/li>\n<\/ul>\n<h2>How to consume it<\/h2>\n<p>Consumed raw, lettuce keeps its vitamin content intact, but it is also excellent cooked. Even the Romans appreciated it both in salads and stewed or cooked with oil and vinegar.
