The days are getting longer, the sun is warming the skin, and the desire for freshness, lightness and color is back&#8230;even at the table. <\/p>\n<p>This is the ideal time to <strong>lighten the diet<\/strong>, cleanse the body after the cold months and replenish <strong>vitamins, minerals and antioxidants<\/strong>.<\/p>\n<h2><\/h2>\n<h2><strong>What does spring offer us?<\/strong><\/h2>\n<p>From March to June we find:<\/p>\n<ul>\n<li><strong>Green leafy vegetables<\/strong> such as spinach, arugula and chard<\/li>\n<li><strong>Asparagus<\/strong>, known for its diuretic and depurative power<\/li>\n<li><strong>Fresh legumes<\/strong> such as peas and broad beans, rich in plant protein and fiber<\/li>\n<li><strong>Colorful<\/strong> and antioxidant <strong>fruits<\/strong>: strawberries, kiwis, cherries, apricots&#8230;<\/li>\n<\/ul>\n<p>These foods, due to their water and micronutrient content, <strong>accompany our bodies through the change of seasons<\/strong>, preparing them for the summer heat.<\/p>\n<h2><\/h2>\n<h2><strong>Seasonal spending: what to put in the cart month by month?<\/strong><\/h2>\n<p><strong>  March<\/strong><\/p>\n<ul>\n<li><strong>Asparagus<\/strong>: one serving covers more than half of the daily requirement of <strong>vitamin K<\/strong> and almost all of that of <strong><strong>folic acid<\/strong><\/strong><\/li>\n<li><strong>Oranges<\/strong>: rich in <strong>vitamin C<\/strong>, they help blood pressure and blood vessel health<\/li>\n<li><strong>Kiwi<\/strong>: Only 2 fruits cover the entire requirement of <strong>vitamin C<\/strong> and half that of <strong><strong>vitamin K.<\/strong><\/strong><\/li>\n<\/ul>\n<p><strong>April<\/strong><\/p>\n<ul>\n<li><strong>Broad beans<\/strong>: one serving provides nearly half the daily vitamin C, and improves the absorption of <strong><strong>iron<\/strong><\/strong><\/li>\n<li><strong>Strawberries<\/strong>: contain <strong>anthocyanins<\/strong> and <strong>fisetin<\/strong>, flavonoids that promote <strong><strong>longevity and memory<\/strong><\/strong><\/li>\n<li><strong>Apples<\/strong>: with their mix of <strong>fiber<\/strong> and <strong>phenolic substances<\/strong> they protect the <strong><strong>heart.<\/strong><\/strong><\/li>\n<\/ul>\n<p><strong>May<\/strong><\/p>\n<ul>\n<li><strong>Medlars<\/strong>: sweet and delicate fruit, a source of <strong>vitamin A<\/strong>, useful for skin and mucous membranes<\/li>\n<li><strong>Cherries<\/strong>: rich in <strong>anthocyanins<\/strong>, allies of the <strong><strong>cardiovascular system<\/strong><\/strong><\/li>\n<li><strong>Peas<\/strong>: source of <strong>plant protein, fiber, vitamins and minerals<\/strong>; can also be eaten with the <strong><strong>pod.<\/strong><\/strong><\/li>\n<\/ul>\n<p><strong>  June<\/strong><\/p>\n<ul>\n<li><strong>Radishes<\/strong>: rich in <strong><strong>potassium, magnesium, vitamin C and folate<\/strong><\/strong><\/li>\n<li><strong>Apricots<\/strong>: excellent source of <strong>vitamin A<\/strong>, essential for <strong><strong>vision, skin, bones and immune system<\/strong><\/strong><\/li>\n<li><strong>Tomatoes<\/strong>: contain <strong>lycopene<\/strong>, a carotenoid whose antioxidant power <strong>increases with cooking.<\/strong><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h2><strong>A tip for spring cooking<\/strong><\/h2>\n<p>Spring is the perfect season to <strong>experiment<\/strong>: crisp salads, light soups, colorful one-pot meals and recipes with fresh vegetables as the stars.
